Base3/4 cup butter1/3 cup sugar8 tbsp cocoa2 beaten eggs2 1/4 cups graham cracker crumbs3/4 cup fine or medium unsweetened coconut1/2 cup finely chopped walnutsCream Filling3/4 cup butter4 1/2 cups icing sugar i.e. powdered sugar or confectioners sugar1/3 cup Irish Cream LiqueurChocolate Topping1 cup chocolate chips¼ cup Irish cream Directions In a small pan on low heat, melt together butter, sugar and cocoa.
Beat egg and add in, stirring constantly to fully cook the egg with the mixture.
Add in the graham crumbs, coconut and walnuts.
Mix together until well combined.
Press the mixture into the bottom of a lined 9×9 inch baking pan. Set aside.
In a separate bowl, mix together butter, icing sugar and Baileys until very smooth.
Texture should be relatively thick but easily spreadable.
Spread mixture over the previous layer in your baking dish.
Chill in the fridge for several hours prior to adding the final layer.
To prepare the topping, melt the Baileys and chocolate chips together over low heat until chips are fully melted.
Pour and spread evenly over your chilled previous layer and return to the fridge until chocolate sets.
Cut into squares or bars.
